🌿 Vegan Tofu/Vegetable Biryani Recipe 🍲

A flavorful and wholesome one-dish meal that’s as satisfying as it is delicious! This vegan twist on classic biryani is a celebration of aromatic spices and vibrant flavors.


For the Rice:

  • 2 cups Basmati rice
  • 4 cups frozen mixed vegetables
  • 1/2 onion
  • 1 block of tofu (or paneer for non-vegan option)

For the Paste:

  • 1/2 onion
  • 6 garlic cloves
  • 1-inch ginger
  • 1 green chili
  • 2 cloves
  • 1 cardamom pod
  • 1/4-inch cinnamon
  • 1 tsp fennel seeds
  • 1/4 cup coconut
  • 1/4 tsp coriander seeds
  • 1/2 cup water (for paste)

Additional Ingredients:

  • 1 tsp oil
  • 1 tsp turmeric
  • Salt to taste
  • 1/2 cup cashews and raisins


  • Prepare the Rice: Heat 1 tsp oil, sauté 2 cups Basmati rice for 2 minutes, then set aside. In the same pot, add 1 tsp oil, cook the paste for a few seconds, then add the sautéed rice, 4 cups water, 1 tsp turmeric, and salt. Cook until it starts to boil, then cover and simmer until done.
  • Prepare the Vegetable Mixture: Sauté 1/2 onion and frozen vegetables, then add cashews and raisins.
  • Combine Rice and Vegetables: Mix the cooked rice with the vegetable mixture.
  • Prepare Tofu (or Paneer): Cut tofu into cubes, drain excess water. Mix it with 1 tsp oil, 1/2 tsp salt, and 1/2 tsp tandoori masala. Air fry for 10 minutes at 450°F.
  • Assemble the Biryani: Add the cooked tofu to the biryani mixture and gently combine.

Vegan Adaptations:
