Ingredients:
- 1 cup fortified cream of wheat
- 1 tbsp oil (for roasting)
- 2 tbsp oil (for tempering)
- 1 tbsp mustard seeds
- 2 tbsp urad dal
- 2 tbsp channa dal
- 2 tbsp cashews
- 1 sprig of curry leaves (optional)
- 1 diced jalapeno (adjust to taste)
- 1-inch ginger, diced
- 1 onion, diced
- 1 tsp turmeric powder
- 2 tomatoes, diced
- 2 cups mixed peas and carrots (frozen or fresh)
- 3 cups water
- Salt, to taste
- Cilantro, for garnish
Instructions:
- Roast the Cream of Wheat: In a pan, roast 1 cup of cream of wheat with 1 tbsp of oil until it turns golden brown. Set aside.
- Temper the Spices: Heat 2 tbsp of oil in a pan. Add mustard seeds, urad dal, channa dal, cashews, curry leaves, diced jalapeno, and ginger. Sauté until aromatic.
- Add Vegetables: Add diced onion and turmeric powder. Sauté until onions turn translucent. Then, add diced tomatoes and cook until tender. Stir in the mixed peas and carrots.
- Cooking the Upma: Pour in 3 cups of water and add salt to taste. Bring it to a boil.
- Simmer and Add Cream of Wheat: Once boiling, reduce the heat to a simmer. Gradually add the roasted cream of wheat while stirring continuously to avoid lumps.
- Final Touch: Cover and let it simmer for a few minutes until the upma reaches your desired consistency.
- Garnish and Serve: Garnish with fresh cilantro before serving.
