Ingredients:

  • 1 cup fortified cream of wheat
  • 1 tbsp oil (for roasting)
  • 2 tbsp oil (for tempering)
  • 1 tbsp mustard seeds
  • 2 tbsp urad dal
  • 2 tbsp channa dal
  • 2 tbsp cashews
  • 1 sprig of curry leaves (optional)
  • 1 diced jalapeno (adjust to taste)
  • 1-inch ginger, diced
  • 1 onion, diced
  • 1 tsp turmeric powder
  • 2 tomatoes, diced
  • 2 cups mixed peas and carrots (frozen or fresh)
  • 3 cups water
  • Salt, to taste
  • Cilantro, for garnish

Instructions:

  • Roast the Cream of Wheat: In a pan, roast 1 cup of cream of wheat with 1 tbsp of oil until it turns golden brown. Set aside.
  • Temper the Spices: Heat 2 tbsp of oil in a pan. Add mustard seeds, urad dal, channa dal, cashews, curry leaves, diced jalapeno, and ginger. Sauté until aromatic.
  • Add Vegetables: Add diced onion and turmeric powder. Sauté until onions turn translucent. Then, add diced tomatoes and cook until tender. Stir in the mixed peas and carrots.
  • Cooking the Upma: Pour in 3 cups of water and add salt to taste. Bring it to a boil.
  • Simmer and Add Cream of Wheat: Once boiling, reduce the heat to a simmer. Gradually add the roasted cream of wheat while stirring continuously to avoid lumps.
  • Final Touch: Cover and let it simmer for a few minutes until the upma reaches your desired consistency.
  • Garnish and Serve: Garnish with fresh cilantro before serving.
