Lemon Rice

🍋 Lemon/Lime Rice Recipe 🍚

A beloved South Indian delight that never fails to dazzle taste buds!

Ingredients:

  • 2 cups rice (basmati, sona masoori, or long grain)
  • 4 cups water
  • Salt to taste
  • 1 tbsp oil

For the Lemon/Lime Mixture:

  • Juice from 4 lemons/limes
  • ½ tsp salt
  • 2 tbsp oil
  • 2 tbsp mustard seeds
  • 4 tbsp urad dal
  • 4 tbsp channa dal
  • 1 red chili
  • 1 diced jalapeno
  • Pinch of asafoetida (optional)
  • 2 tsp turmeric powder
  • Pinch of fenugreek powder
  • Curry leaves
  • 4 tbsp roasted peanuts
  • Fresh cilantro for garnish

Instructions:

  • Cook 2 cups of rice with 4 cups of water, salt, and 1 tbsp oil.
  • In a bowl, combine lemon/lime juice with ½ tsp salt.
  • Heat 2 tbsp oil, add mustard seeds and urad dal. When brown, add channa dal. Let it fry, then add red chili, diced jalapeno, and curry leaves.
  • Just before turning off the heat, add a pinch of asafoetida, turmeric, and fenugreek powder. Add roasted peanuts and pour this mixture into the lemon juice.
  • Mix the lemon mixture into the cooked rice. Garnish with fresh cilantro.
