🍋 Lemon/Lime Rice Recipe 🍚
A beloved South Indian delight that never fails to dazzle taste buds!
Ingredients:
- 2 cups rice (basmati, sona masoori, or long grain)
- 4 cups water
- Salt to taste
- 1 tbsp oil
For the Lemon/Lime Mixture:
- Juice from 4 lemons/limes
- ½ tsp salt
- 2 tbsp oil
- 2 tbsp mustard seeds
- 4 tbsp urad dal
- 4 tbsp channa dal
- 1 red chili
- 1 diced jalapeno
- Pinch of asafoetida (optional)
- 2 tsp turmeric powder
- Pinch of fenugreek powder
- Curry leaves
- 4 tbsp roasted peanuts
- Fresh cilantro for garnish
Instructions:
- Cook 2 cups of rice with 4 cups of water, salt, and 1 tbsp oil.
- In a bowl, combine lemon/lime juice with ½ tsp salt.
- Heat 2 tbsp oil, add mustard seeds and urad dal. When brown, add channa dal. Let it fry, then add red chili, diced jalapeno, and curry leaves.
- Just before turning off the heat, add a pinch of asafoetida, turmeric, and fenugreek powder. Add roasted peanuts and pour this mixture into the lemon juice.
- Mix the lemon mixture into the cooked rice. Garnish with fresh cilantro.
