NO ADDED SUGAR, NO ADDED FAT, WHOLE FOOD PLANT-BASED BANANA BREAD
February is Heart Health Month, and what better way to celebrate than with a classic, comforting banana bread made the heart-healthy way!
This recipe is perfect for those following the Ornish, Pritikin or Dash diets — packed with fiber, omega-3s, and naturally sweetened with dates!
Heart-Healthy Banana Bread Recipe
- Flax Egg: Mix 2 tbsp flax meal with 6 tbsp water. Set aside to form a gel.
- Dry Ingredients:
- 2 cups einkorn whole wheat flour
- 1 tsp baking soda
- 2 tbsp baking powder
- Fruit Base:
- 2 apples (peeled, diced, and cooked with a sprinkle of water in the microwave for 3 min)
- 6 ripe bananas
- 8 pitted, chopped Medjool dates
- Flavor & Texture:
- 1 tsp vanilla essence
- 1/3 cup diced walnuts
🌿 Instructions:
- Blend cooked apples, bananas, and dates until smooth.
- Add flax mixture and vanilla essence to the blender, and blend again.
- In a bowl, combine flour, baking soda, and baking powder.
- Pour the blended mixture into the dry ingredients. Fold in the walnuts.
- Prepare a greased loaf pan and add the batter.
- Bake at 350°F for 45 min.
- Let cool and enjoy a slice of heart-loving goodness!
